Pineapple Lychee Smoothie

Pineapple is one of the most popular and widely available tropical fruits. Here in Thailand, the pineapple is the best I’ve ever tasted. Its sweet flowery flavor and slightly acidic composition makes it a powerhouse ingredient in any smoothie. In this smoothie I combine pineapple and lychee for a thick creamy protein shake that really satisfies. I like to use frozen lychee because there is nothing added to it. Canned lychee often is packed in syrup so it can add extra sugar to the fruit. Here in South East Asia, frozen lychee is widely available. In other locations, you may be able to find frozen lychee in the freezer section of your local Asian market. If you cannot find it, you can make this smoothie with just pineapple and it will still be a delicious burst of tropical flavor. Consider adding a teaspoon of matcha powder to this smoothie for an extra antioxidant boost. The sweetness of the pineapple balances the strong flavor of the green tea for a nice treat for your tastebuds.

Ingredients

  • 1 cup fresh pineapple (peeled , cored and sliced)
  • 1/2 cup lychee (frozen or fresh)
  • 1 scoop protein powder (your favorite is best)
  • 1/2 cup coconut water
  • 1/2 cup ice
  • 1 tsp matcha green tea powder ((optional))

Instructions

  1. Add all ingredients to the pitcher of your blender. Cover and puree on high for approximately two minutes until frothy and smooth.
    Pour into a glass and enjoy.
