Watermelon Lime Smoothie

Watermelon is one nutritious fruit. Even though it is largely water, as its name suggests, it is loaded with Vitamin A, Vitamin C, lycopene, potassium and B Vitamins. Its high water content not only helps you hydrate, it helps you feel full. The hydration factor in this watermelon smoothie is boosted by using coconut water as the liquid. Coconut water, like watermelon, also contains potassium which aids electrolyte functions in the body. If your watermelon happens to have seeds, no worries there. Just blend them up and their nutrients will be disbursed throughout the smoothie. My kids love watermelon smoothies and with the addition of protein in this smoothie, it is something I can feel good about giving family as a quick morning meal or an afternoon snack. In snack form I just serve a smaller portion so one recipe could be split between two people, if you are enjoying this as a snack.

Ingredients

  • 1 cup watermelon (chopped, preferably organic)
  • 1 scoop protein powder (your favorite is best)
  • 1 cup coconut water
  • 1/2 lime (juiced)
  • 1/2 cup ice cubes

Instructions

  1. Add all ingredients to the pitcher of your blender. Cover and puree on high until the mixture is smooth and frothy. Pour into a glass and enjoy.
