Orange Spice Muffins (Grain Free)

These Orange Spice Muffins are bursting with flavor and are full of nutritious ingredients. They are also grain free and dairy free. I adapted them from a, “Trim Healthy Mama,” recipe for white muffins. I’ve adjusted the amounts of ingredients and also added orange zest and spies to make one yummy muffin. They are made with coconut flour which is loaded with natural fiber that aids digestion along with healthy fats. They are full of delicious cinnamon and cloves and cardamom and are made with either xylitol or raw honey so that they taste fabulous without the sugar overload of a regular muffin. Xylitol is a natural sweetener that is derived from hardwood trees. Unlike sugar, xylitol has been proven to have many positive benefits to dental health and is even been identified as a collagen builder! Watch for my upcoming article on the various natural sweeteners and their uses. Another great thing about this recipe is you make the batter in the food processor so there is only one bowl to clean!

Ingredients

  • 2/3 cup coconut flour
  • 1 tsp baking powder
  • 6 eggs (preferably pasture-raised and organic)
  • 1/2 cup monk fruit sweetener
  • 1/4 cup coconut oil (melted)
  • 1/4 cup almond or coconut milk
  • zest of one orange
  • 1/2 tsp ground cloves
  • 2 tsp cinnamon
  • 1/4 tsp ground cardamom

Instructions

  1. Pre-heat your oven to 350. Line a 12 slot muffin tin with muffin cups and set aside.
  2. In the bowl of a food processor, add the coconut flour and baking powder. Pulse a few times to combine and smooth out the coconut flour.
  3. Add the zest, spices and sweetener and pulse a few times to combine. Add the eggs, coconut oil, and milk and pulse until the mixture is well combined and smooth.
  4. Using an ice cream scoop with a trigger or a large spoon, divide the batter evenly between the 12 muffin cups filling them just over 1/2 way full.

    Place the muffin tin in the oven and bake the muffins for approximately 20-25 minutes until the muffins spring back when touched in the center. Let cool a bit and then transfer the muffins to a rack to finish cooling. Store extra muffins is a sealed container at room temperature. Enjoy!
