Warm Spiced Quinoa with Organic Berries

Warm, comforting and nutritious, this spiced quinoa topped with your favorite fresh organic fruit is a great way to start the day. You can use plain leftover quinoa and spice it up or cook it from scratch with the spices. Either way, this warm spiced quinoa is quick and easy to prepare. Great for busy mornings when you want something filling that is fast and tasty too. For an extra protein boost, you can top it with plain greek yogurt or stir in half a scoop of protein powder to the warm cooked quinoa and milk. An unflavored grass-fed whey protein powder works great. I find that with the berries, cinnamon and other spices the dish is sweet enough for me, however if you like it sweeter, drizzle a bit of honey or maple syrup over the top before serving.

  • 1 cup organic quinoa
  • 2 cups water
  • 1/2 tsp whole cloves
  • 2 tsp cinnamon
  • 1/4 tsp cardamom
  • 1 cup almond or coconut milk
  • 2 cups fresh organic berries

Instructions

  1. Rinse the dry quinoa under cold water. Put two cups of water into a small sauce pan and set it to boil over high heat. Once the water comes to a boil, add the rinsed quinoa to the pot. Add the spices to the pot and stir. Reduce the heat to low, cover and cook the quinoa for approximately 15 minutes until all the liquid is absorbed.
  2. Place the milk in a separate small sauce pan add the almond or coconut milk and set it over low heat. Gently warm the milk making sure it does not boil. (If you prefer, you can heat the milk in the microwave for a minute or so)
  3. Once the quinoa is cooked and the milk is warm, distribute the quinoa between four bowls or if you are making just one serving, then place 3/4 cup of quinoa in the bowl, then pour 1/4 cup of milk over the top and stir. Top with fresh berries and enjoy. Extra quinoa can be stored in an airtight container for up to a week in the refrigerator.
