Sauteed Kale and Garbanzo Beans

Sometimes necessity truly is the mother of invention! I whipped up this sauteed kale dish for lunch the other day. I was wanting a vegetarian meal and was working with the kale and other veggies in my fridge, finding myself needing to use garbanzo beans in a new way. The great thing about this sauteed kale dish is that with the garbanzo beans as protein, it is a complete meal! With this super simple and fast sauteed kale dish, you will see how easy it is to enjoy the nutritional benefits of kale in a complete vegetarian meal. You can also enjoy this sauteed kale as a side dish with your favorite fish or protein. This dish is tasty, nutritious, and super easy to make. The mushrooms and garlic add a heartiness to the dish and the carrot adds a bit of sweetness that rounds out the flavor of the sauteed kale. Enjoy this dish anytime as a side dish or a complete meal.

Ingredients

Scale
  • 1 bunch organic kale (de-ribbed & chopped, Dinosaur kale is best)
  • 1 can Organic Garbanzo beans (drained and washed)
  • 1 cup Cremini mushrooms (sliced)
  • 1 large red or orange carrot (trimmed, peeled, and diced)
  • 4 cloves Garlic (sliced)
  • 2 tsp olive oil or avocado oil
  • 1 splash Sherry Vinegar (or balsamic vinegar)
  • course sea salt or smoked salt (to taste)
  • freshly ground pepper (to taste)

Instructions

  1. Set a large saute pan over medium high heat. Allow the pan to warm up a bit, then add the oil. Once the oil is heated add the garlic. Saute the garlic until translucent then add the mushrooms to the pan. Add the salt and pepper to the pan and saute the mushrooms until they are just starting to brown.
  2. Add the kale, garbanzo beans and carrot to the pan. Saute all the ingredients in the pan until the kale and carrots are tender. Add the sherry vinegar and continue to saute the dish for one to two minutes more.
  3. Serve the sauteed kale and garbanzo beans while warm. Enjoy!
