Organic Cranberry Sauce

There is something really special about homemade cranberry sauce. The flavors are bright, tangy and sweet with a lovely freshness you only achieve from making it yourself. This cranberry sauce recipe is super easy and rather quick. It is a great make ahead item for your holiday dinner or anytime you have a taste for cranberries. Another wonderful thing about this cranberry sauce recipe: it is organic and healthier than other recipes because it is sweetened with raw organic honey instead of sugar. The lemon and orange zest add depth, while the walnuts and raisins add body to the cooked sauce.

Ingredients

  • 16 oz organic fresh cranberries
  • 1 cup water
  • 1 cup honey (organic and raw )
  • 1 organic orange (zested and juiced)
  • 1 organic lemon (zested and juiced)
  • 2 tsp vanilla bean paste or vanilla extract
  • 3/4 cup walnuts (chopped)
  • 3/4 cup organic raisins

Instructions

  1. Add the fresh cranberries, honey and water to a deep sauce pan and set it over medium high heat until the water starts to simmer and the cranberries start to pop.
    Approximately 5 minutes
  2. Turn the heat to medium and add the orange and lemon juice and the orange and lemon zest to the pot. Add the vanilla and stir well. Simmer approximately 20 minutes longer over medium heat until the cranberries are soft and the sauce has thickened a bit.
  3. Remove the sauce from the heat and stir in the walnuts and raisins. Carefully transfer the sauce to a glass storage container or a serving bowl and let it cool to room temperature. If you are making it ahead, cover the cooled cranberry sauce and store it in the refrigerator until you are ready to serve it.

Notes

This sauce is totally versatile, so if you prefer a pecans, almonds or hazelnuts to walnuts, add them instead. Don’t love raisins, add chopped dried cherries instead.  Play around with what ever additions you like.  Chopped crystallized ginger would be a nice touch! Be bold, it’s your sauce so add things that are pleasing to your palate.
