Butternut Squash Fries

When you are looking for something satisfying and comforting but, still healthy, try these butternut squash fries. The reason I like these almost more than sweet potato fries is because the roasted butternut squash has a consistency very similar to white potatoes, so you get that french fry satisfaction. However, butternut squash has many more nutrients than white potatoes. They are easy to make and pair well with my Asian Flavors Chicken Burgers for a hearty low carb meal that satisfies. Oh, and did I mention my kids love these fries? They gobble them up happily. Please see the recipe notes for links to nutrition info and health benefits of butternut squash. Ingredients

Scale
  • 1 large butternut squash (preferably organic)
  • 1 1/2 tbsp Avocado oil ((see recipe notes))
  • 2 tsp course sea salt or smoked salt
  • 1 tsp Freshly ground black pepper

Instructions

  1. Preheat your oven to 425℉.
  2. Wash and dry the butternut squash. Place the squash on a cutting board and carefully trim the top stem and the bottom end off. Then using a vegetable peeler, peel the beige colored skin off of the squash.
  3. Once the squash is peeled, carefully cut the squash in half length wise. Using a large spoon, scrape out the seeds from both sides of the squash just as you would when you remove the seeds from a pumpkin. Once all the seeds are removed, carefully slice both sides of the squash into long strips. Then cut the long strips in half or in thirds depending on the size of the squash. You want the strips to resemble french fries.
  4. Once the squash is cut into “fries”, arrange them in one single layer on a baking sheet lined with parchment paper or a silicon baking mat. Drizzle the squash with the avocado oil and then sprinkle the salt and pepper over the fries evenly.
  5. Place the baking sheet on the center rack of the preheated oven. Bake the fries for approximately 25-35 minutes or until the squash is browned and is fork tender. For best results, carefully remove the baking sheet from the oven after about 15 minutes of cooking. Turn the fries over using a spatula so that they cook evenly on both sides. Then return the baking sheet to the oven and finish cooking the fries.
  6. Once the fries are done baking, remove them from the oven and serve immediately with your favorite organic ketchup or dipping sauce. Enjoy!
