Healthier Mashed Potatoes

When it comes to mashed potatoes, they should be delicious and comforting, but they do not need to be loaded with cream in order to make them tasty, in fact, cream can make potatoes gummy and muddle the flavor of the potato. I like to use the flavorful thinly skinned Yukon Gold potatoes. They have great flavor and beautiful color when they are cooked. I like to leave the skins on to add more texture and nutrients, but if you really enjoy mashed potatoes with no skin in them, please feel free to peel the potatoes prior to boiling the potatoes. I believe in balance, and celebration food is part of that balance. Food that you enjoy on special occasions and feel good about it. Ingredients

  • 4 pounds Yukon Gold Potatoes (washed and chopped into large chunks)
  • 5 cloves Garlic (peeled and left whole)
  • 1/2 cup Extra Virgin Olive Oil
  • 1 stick butter or ghee (room temperature)
  • to taste sea salt
  • to taste Freshly ground black pepper

Instructions

  1. Fill a large stock pot 3/4 full with cool water and bring it to a boil over medium high heat.
    Once the water boils, add the garlic and potatoes and some salt to the water, carefully.
  2. Cook the potatoes until tender for approximately 20 minutes. Once the potatoes are cooked, carefully drain the potatoes and place the potatoes and garlic into a large bowl. Add the room temperature butter or ghee and EVOO plus salt and pepper to the bowl and mash until a smooth consistent texture has been reached.
    Enjoy immediately!
