Green Beans with Shallots and Orange Zest

These green beans with shallots and orange zest are quick and are one of my favorite ways to prepare green beans. I use French beans, organic when I can find them. French beans are thinner than regular green beans and will cook quickly when sautéd, so I choose not to blanch them first. They have a nice crunch and are very flavorful due to the shallots and orange zest. They pair well with many types of protein and other vegetable dishes. If you are not a fan of orange you can use lemon, meyer lemon or lime zest. If zest does not appeal to you, a splash of apple cider vinegar or sherry vinegar can replace the acidity of the zest but still provide the necessary acidity to balance the dish. Please experiment with flavors that appeal to you and make the dish your own.

Ingredients

  • 1 pound French beans (trimmed and washed, preferably organic)
  • 1/2 large shallot (peeled and minced)
  • 1 large organic orange (zested)
  • 2 tsp avocado oil or red palm oil (see recipe notes )

Instructions

  1. Heat the oil in a large deep sauté pan or wok set over medium high heat. Add the shallots and sauté until they are soft. Add the green beans and season with salt and pepper. Sauté for approximately 5 – 7 minutes until the green beans are bright green and cooked through while still having a good crunch.
  2. Remove the green beans and shallots from the heat and sprinkle the zest over the beans. Toss the green beans, shallots and zest until well distributed. Transfer the green beans to a serving dish and serve immediately.
