Roasted Shiitake Mushrooms

Shiitake mushrooms are one of my very favorite varieties because of their wonderfully unique flavor and their firm texture. When they are roasted the flavor and texture improves even more! These roasted gems are so tasty, it is hard to stop eating them. Luckily, these babies are healthy so go ahead and enjoy. They are a great dish for entertaining because they are easy to prepare and are a real crowd pleaser. I have even made them on the barbecue in the summer time so grill or oven roast a batch today. Enjoy!

Ingredients

  • 20 Shiitake mushrooms (cleaned and stems removed)
  • 1 tbsp sesame oil
  • 2 tsp ground ginger
  • 2 tsp garlic powder
  • 2 tsp tamari or coconut aminos ((tamari is wheat free soy sauce))
  • 1 tsp Freshly ground black pepper

Instructions

  1. Preheat your oven to 425℉. Place the cleaned and stemmed Shiitake mushrooms in a large bowl. Add the sesame oil, ginger, garlic powder, tamari, and black pepper to the bowl.
    Gently toss the mushrooms in the bowl until they are well coated with the oil and other ingredients.
  2. Arrange the mushrooms stem side up in a single layer on a large baking sheet that is lined with parchment paper or a silicon baking mat.
    Place the baking sheet in the oven and roast the mushrooms for approximately 10 – 12 minutes until the mushrooms have browned on the side that is in contact with the sheet pan.
  3. Carefully remove the sheet pan from the oven. Using tongs, gently turn over each mushroom so it is resting stem side down on the baking sheet. Place the sheet pan back in the oven and continue roasting the mushrooms for 5 to 10 minutes more. When done the mushrooms will be golden brown and a bit crispy on both sides.
  4. Carefully remove the baking sheet from the oven and transfer the mushrooms to a serving dish. Let them cool slightly and enjoy!
