Pineapple Tomatillo Salsa

Ingredients

  • 6 cups fresh tomatillos (remove papery wrappers and wash well)
  • 1 1/2 cups fresh pineapple (peeled and cored)
  • 1 or 2 jalapeno peppers (seeded and deribbed)
  • 5 cloves Garlic (peeled )
  • 1/2 red onion (peeled and chopped)
  • 2 tbsp fresh cilantro leaves (chopped)
  • 1 lime (juiced)
  • 2 tsp sea salt

Instructions

  1. Carefully slice each tomatillo in half and add them to the pitcher of your blender.
  2. Add all of the other ingredients to the pitcher except the jalapeno and the pineapple. Place the lid on the blender and puree until smooth.
  3. Add the pineapple to the pitcher of the blender. Then add the jalapeno to the pitcher too. (One jalapeno will make a mild to medium salsa. If you prefer a spicier salsa, add another jalapeno to the pitcher). Replace the lid on the blender and puree until smooth.
  4. Transfer the salsa to your serving dish, cover it and refrigerate until ready to serve. This recipe makes about 6 cups of salsa. You can store the extra salsa in a glass container with a lid. Store in the refrigerator for up to one week. Although it is so tasty, it probably will be eaten up quickly!
