Fire & Ice Watermelon Salad

This fresh crunchy salad is both savory and sweet. It is totally refreshing and satisfying at the same time. Keeping the watermelon very cold until it is time to dress and serve the salad is key to the dish. The contrast of the cold watermelon and the spicy dressing is a fun experience for your taste buds. A spicier leaf such as watercress or arugula compliments the sweet watermelon quite nicely. So if watercress is too costly or not available in your area, arugula works very well.

Ingredients

Scale
  • 2 cups Watercress or Arugula (washed and dried)
  • 1 English cucumber (washed, seeded & diced)
  • 1/2 watermelon (preferably seedless & organic, washed, seeded and diced)

For the Dressing

  • 1/4 cup lime juice (freshly squeezed (more if necessary))
  • 2 t Chili Oil
  • 3 T olive oil
  • 1 t honey (preferably organic)
  • 2 garlic cloves (minced)
  • 1/8 t red pepper flakes ((more if you like things really spicy))

Instructions

  1. In a large bowl, combine the watercress or arugula, watermelon and cucumber.
  2. Chill the salad in the refrigerator for one hour.

For the Dressing

  1. Whisk all ingredients together in a small bowl.
  2. Pour the dressing over the chilled salad and toss gently.
  3. Serve immediately.

Notes

Using a small spoon, taste the dressing to make sure you can taste the lime juice. It helps bring out the watermelon flavor so it is important that you can detect the flavor of the lime juice in the dressing. It should be there but not over powering. If more is needed, juice another half of a lime and add the juice to the dressing one teaspoon at a time, tasting after each addition until the dressing is just right. Enjoy!
