  • 1/4 cup chia seeds (preferably organic)
  • 1 tsp matcha green tea powder (find it at your local health food or gourmet shop)
  • 1/4 tsp stevia
  • 1/2 tsp cinnamon
  • 1/4 tsp cardamom
  • 1 sprinkle ground cloves
  • 1/2 tsp ground nutmeg (freshly ground is best)

Topping (for 4 portions)

  • 1/2 cup raw soaked almonds (see recipe description for instructions)
  • 1/2 cup dried cranberries (or fresh berries of your choice)
  • 2 tsp local honey

Instructions

  1. In a medium sized bowl, add the coconut milk, chia seeds, matcha powder, stevia, and spices.
  2. Gently whisk all of these ingredients together. Cover and refrigerate overnight.

For serving

  1. After the pudding has been refrigerated overnight, stir the pudding and then divide it evenly between 4 small bowls.
  2. Chop the dry soaked almonds and sprinkle over the top of the pudding.
