Blueberry Sorbet

What is better in the summer than a refreshing frozen treat? A refreshing frozen treat that is also good for you is even better! The great thing about this blueberry sorbet is that it is not too sweet, but is tasty and cools you off. This sorbet has body to it because the mixture is simply pureed and neither cooked nor strained. The raw goodness of the fresh berries is maintained. Ingredients

  • 3 cups or 24 oz fresh blueberries (organic if possible)
  • 2 1/2 ounces Moscato Wine (or other sweet dessert wine)
  • 3/4 cup or 6 oz raw honey (preferably organic)
  • 1 lemon (zested)
  • 1 cup or 8 oz fresh raspberries

Instructions

  1. In the pitcher of a blender, add the blueberries, raspberries and Moscato Wine.
  2. Puree the berries until the mixture is a smooth liquid consistency.
  3. Transfer the mixture to a bowl and stir in the honey and lemon zest.
  4. Stir the mixture until it is well combined.
  5. Chill the mixture in the refrigerator overnight or for several hours.
  6. Transfer the mixture to the freezer bowl of your ice cream maker and freeze the mixture according to the machine’s directions.
  7. If you do not own an ice cream maker, transfer the mixture to a shallow, freezer safe dish and store the in the freezer until it is frozen solid.
  8. Once frozen, remove the mixture from the freezer and using a butter knife, carefully break the mixture into chunks and transfer them to the bowl of a food processor fitted with the standard blade.
  9. Process the chunks until smooth.
  10. Place the processed mixture in a freezer safe container and cover tightly. Chill for 30 minutes
  11. Serve in small bowls and enjoy!
