Many people are very intimidated by the idea of cooking fish at home. They are not sure how to cook it so they don’t even try. I’m here to show you how easy it is to prepare a beautiful fish dinner at home. The first step is to find the right fish. For this dish I chose wild caught Alaskan king salmon. This restaurant style salmon is seared and then finished in the oven which produces a delicious piece of fish with relatively little effort. Once you learn this technique used in the finest restaurants, you will confidently be cooking fish at home. This technique is best for thicker filets of fish and is best with skin on fish. The fat gets fully rendered in the cooking process so the skin becomes crunchy and delicious. Just like bacon from the sea! This restaurant style salmon is served with stir fried veggies, but feel free to pair it with any veggie or starch options you choose. Carefully cut the salmon into 4-6 equal portions (or ask your fish monger at the market to do it for you when you purchase the fish. This is a free service they provide). Season the fish with salt and pepper.
Set a large oven proof skillet over medium high heat. Add the avocado oil or other high heat cooking oil to the pan and let it warm up a bit. Add the fish filets to the pan skin side down and cook for 2 minutes.
